Chicken tacos with tomato salsa and guacamole

Delicious homemade guacamole and tangy tomato salsa create a perfect family meal.
Ingredients:
  • 2 large Free Range Chicken breasts (approx 500g)
  • 30g packet taco seasoning
  • 36.40 gm olive oil
  • 200g tomato medley, roughly diced
  • 1 corn cob, kernels removed
  • 2 green onions, thinly sliced
  • 62.50 ml coriander leaves, chopped
  • 1/2 red onion, finely chopped
  • 12 white corn tortillas, to serve
  • Lime wedges, to serve
  • Coriander sprigs, to serve
  • Sour cream, to serve
Instructions:
  • Cut the chicken breasts into 4 to 5 long strips. Place them in a large ziplock bag with the taco seasoning, then shake well to coat the chicken evenly. Add additional seasoning to taste.
  • In a large non-stick frying pan over medium heat, heat 1 tablespoon of olive oil. Cook the chicken for 6 to 7 minutes, turning frequently, until browned and fully cooked. Rest on a foil-covered plate for 5 minutes before slicing, if desired.
  • In a medium bowl, mix together the tomatoes, corn, green onions, and chopped coriander. Add seasoning, remaining olive oil, and 1 tablespoon of lime juice. Stir well to combine.
  • Combine ripe avocado, finely diced red onion, and the remaining freshly squeezed lime juice in a separate bowl. Season the mixture to taste.
  • Warm tortillas per the package instructions. Serve alongside chicken, tomato salsa, guacamole, lime wedges, fresh coriander, and sour cream, if desired.
