Easy and quick succulent chicken tagine ready in just 30 minutes.
Ingredients:
  • 36.40 gm olive oil
  • 4 (180g each) chicken thigh fillets, trimmed, halved
  • 1 brown onion, halved, thinly sliced
  • 2 garlic cloves, crushed
  • 10.00 gm Moroccan spice mix
  • 400g can diced tomatoes
  • 400g can chickpeas, drained, rinsed
  • 1 zucchini, halved, cut into 1cm pieces
  • 375.00 ml couscous
  • coriander leaves, to serve
Instructions:
  • In a large, heavy-based frying pan over high heat, heat 1 tablespoon of oil until shimmering. Add the chicken and sear for 2 minutes on each side, or until it turns a light golden color. Transfer the chicken to a plate.
  • Lower the heat to medium and introduce the onion and garlic to the pan. Let them cook and infuse their flavors for 2 to 3 minutes until the onion is soft. Next, introduce the spice mix and let it awaken for about 30 seconds until fragrant.
  • Place the cooked chicken back into the pan and introduce the tomatoes, chickpeas, and zucchini. Allow the mixture to come to a boil, then lower the heat. Cover and simmer for 12-15 minutes, occasionally stirring, until the chicken is tender and fully cooked. Season with salt and pepper to taste.
  • In a saucepan, bring 1 1/2 cups of cold water to a boil. Remove from heat, stir in couscous, cover, and let sit for 3 minutes until liquid is absorbed. Fluff couscous with a fork to separate grains before serving.
  • Plate the couscous, top with the chicken tagine, sprinkle with fresh coriander, and enjoy.
