Effortlessly blend flavorful herbs for a delicious party dip with your food processor.
Ingredients:
  • 1/4 cup chopped fresh parsley
  • 1 1/2 pounds boneless skinless chicken breast halves
  • 2 tablespoons chopped shallots
  • 1 tablespoon chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 2 egg whites
  • 1 small red bell pepper, chopped (1/2 cup)
Instructions:
  • Preheat oven to 350°F. Line an 8 1/2x4 1/2 inch loaf pan with aluminum foil and sprinkle parsley in the bottom.
  • Trim the excess fat from the chicken, then chop it into 1-inch pieces. Place the chicken in a food processor and pulse until coarsely ground. Add all the ingredients except the bell pepper, then blend until smooth. Stir in the bell pepper, then spread the mixture in a pan.
  • Cover the pan snugly with aluminum foil and bake for 1 hour. Remove the foil and bake without covering for an additional 20 to 30 minutes until a meat thermometer inserted in the center reads 180°F. Let it rest covered for 1 hour before serving.
  • Chill for a minimum of 3 hours, up to 48 hours. Flip onto a serving platter and carefully remove the pan and foil.
