Indulgent baked chicken and mushroom spaghetti in creamy Parmesan sherry sauce.
Ingredients:
  • 1 (8 ounce) package spaghetti, broken into pieces
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 0.75 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons sherry
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 2 cups chopped cooked chicken
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish.
  • Bring a pot of salted water to a vigorous boil. Add spaghetti and cook until al dente, about 8-10 minutes. Drain well.
  • In a large saucepan, gently melt butter over low heat. Add flour, salt, and pepper, stirring until smooth. Take off the heat and slowly whisk in chicken broth and cream.
  • Return the mixture to heat, allowing it to gently boil for 1 minute while consistently stirring. Incorporate sherry, then fold in the cooked spaghetti, mushrooms, and chicken. Transfer the flavorful mixture into the baking dish, finishing off with a generous sprinkle of Parmesan cheese on top.
  • Bake in the preheated oven for 30 minutes until golden brown and bubbly.
