Garlic-marinated chicken roasted to golden perfection for rich, intense flavor that delights garlic enthusiasts.
Ingredients:
  • 0.66666668653488 cup olive oil
  • 20 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 1 large whole chicken, cut into 6 serving pieces
  • 1 teaspoon olive oil, or as needed
  • 1 pinch salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh Italian parsley
Instructions:
  • In a blender, combine olive oil, red wine vinegar, garlic, thyme, rosemary, oregano, and red pepper flakes. Blend until a smooth and creamy garlic marinade forms.
  • Score the chicken pieces with a sharp knife. Transfer them to a large bowl, pour the marinade over, and ensure it penetrates the cuts and covers the chicken completely. Cover the bowl with plastic wrap and chill in the fridge overnight.
  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and lightly grease it with 1 teaspoon of olive oil for a non-stick surface.
  • Lay out the chicken pieces on the baking sheet and generously season both sides with salt and black pepper.
  • Roast in the hot oven until a meat thermometer inserted into the thickest part of the chicken reads 160°F (70°C), for about 40-45 minutes. Sprinkle with fresh Italian parsley before serving.
