Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 whole chicken
  • 40 cloves garlic
  • 0.25 cup water
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon ground black pepper
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Combine butter and olive oil in a large Dutch oven over medium-high heat until melted. Sear chicken in the Dutch oven until browned on all sides, about 5 to 10 minutes. Transfer chicken to a cutting board.
  • Remove most of the liquid from the pot, leaving behind 2 tablespoons; mix in garlic cloves. Place chicken back in the pot and sprinkle with water, lemon juice, salt, thyme, and black pepper; cover securely.
  • Roast the chicken in a preheated oven until fully cooked, about 90 minutes or until an instant-read thermometer inserted into the thickest part of the thigh reads 180 degrees F (82 degrees C).
  • Take the chicken out of the oven, cover it with doubled aluminum foil, and let it rest in a cozy spot for 10 minutes before slicing.
