Chicken with 40 Cloves of Garlic

Garlic and herb roasted chicken, perfect for a dinner party of eight.
Ingredients:
  • 2 whole chickens (3 lb each)
  • 8 sprigs fresh thyme
  • 1/4 cup butter, softened
  • 1 lemon, cut in half
  • 2 teaspoons salt
  • 1 teaspoon freshly ground pepper
  • 40 unpeeled cloves garlic (about 3 bulbs)
  • 2 tablespoons olive oil
Instructions:
  • Preheat your oven to 375°F and generously coat a large shallow roasting pan with cooking spray.
  • Place 4 thyme sprigs in the cavity of each chicken, then rub the chickens with softened butter. Tie the ends of the legs together with kitchen string and tuck the wing tips under. Arrange the chickens breast side up in a roasting pan, then squeeze lemon over them and sprinkle with salt and pepper. Insert an ovenproof meat thermometer into the thickest part of the inside thigh muscle, ensuring it does not touch the bone.
  • Toss garlic with oil in a medium bowl. Scatter garlic around chickens, placing cloves close to them. Bake uncovered for 1 hour and 45 minutes, or until a thermometer reads at least 165°F and the chicken legs move easily when lifted.
