Delicious chicken salad with grapes and goat cheese.
Ingredients:
  • Olive oil spray
  • 4 single chicken breast fillets
  • 20.00 ml white balsamic dressing
  • Freshly ground pepper
  • 400g bunch menindee grapes, picked, halved
  • 200g bunch flame seedless grapes, picked, halved
  • 40.00 ml fresh tarragon leaves
  • 100g Tasmanian goat's cheese, broken into pieces
  • 100g baby romaine salad, to serve
Instructions:
  • Prepare a large frying pan by spraying it with oil, then heat it over medium heat. Cook the chicken for 10-12 minutes until it turns golden and is fully cooked.
  • Mix the olive oil and white balsamic vinegar, then season with pepper. Combine the grapes and dressing in a bowl, then gently incorporate the tarragon leaves and goat's cheese.
  • Arrange the salad leaves on serving plates, then add a chicken breast on top followed by salsa and freshly ground pepper. Enjoy with roasted baby potatoes.
