Cozy up with saucy chicken and fluffy couscous for a comforting winter meal. Delicious!
Ingredients:
  • 1.5kg whole chicken
  • 1 brown onion
  • 2.40 gm salt
  • 1 green capsicum, chopped
  • 2 x Mutti Polpa Finely Chopped Tomatoes 400g
  • 125.00 ml Kalamata olives
  • 127.50 gm chicken style liquid stock
  • 1 lemon, rind finely grated
  • 82.50 ml finely chopped fresh parsley
Instructions:
  • Cut a 1.5kg whole chicken into 10 pieces. Heat 1 tablespoon of olive oil in a large heavy-based saucepan over medium-high heat. Season the chicken with salt and pepper, then brown in batches until golden. Transfer chicken pieces out of the pan.
  • Place a sliced brown onion and 1 teaspoon of salt in a pan over medium-low heat and cook for 10 minutes. Add 1 chopped green capsicum and cook for an additional 3 minutes. Add the chicken back to the pan along with an 800g can of diced tomatoes, 1/2 cup of Kalamata olives, and 1/2 cup of chicken stock. Cover and bring to a simmer. Let it simmer partially covered for 20-30 minutes. Season to taste.
  • Mix together the zest of 1 lemon, 1/3 cup of finely chopped fresh parsley, and 1 crushed garlic clove. Sprinkle the mixture over the chicken and serve with couscous.
