Turmeric and paprika seasoned chicken sautéed with bell pepper and onion in a skillet, served over fluffy rice for a simple and flavorful meal.
Ingredients:
  • 1 teaspoon ground turmeric, or to taste
  • 1 teaspoon paprika, or to taste
  • 0.5 teaspoon lemon-pepper seasoning, or to taste
  • 1 (16 ounce) package boneless, skinless chicken breasts, cut into small pieces
  • 1 green bell pepper, seeded and sliced
  • 0.5 onion, halved and sliced
  • 0.5 cup coarsely chopped cilantro leaves, or to taste
  • 1.3333333730698 cups water
  • 0.66666668653488 cup uncooked white rice
  • salt to taste
Instructions:
  • Season chicken with turmeric, paprika, and lemon-pepper. Transfer chicken to a skillet over medium heat and cover with water. Add bell pepper, onion, and cilantro. Simmer until chicken is cooked through and bell peppers are tender, about 20-30 minutes, or until juices run clear.
  • While you wait, let the water and rice come to a boil in a saucepan. Lower the heat to medium-low, cover, and let it simmer until the rice is tender and the water is absorbed, approximately 20 to 25 minutes.
  • Season the savory chicken mixture with a pinch of salt and generously spoon it over a bed of fluffy rice.
