Baked stuffed avocados with savory chicken, tomatoes, cream cheese, and Parmesan filling.
Ingredients:
  • 2 cooked chicken breasts, shredded
  • 4 avocados, halved and pitted
  • 4 ounces cream cheese, softened
  • 0.25 cup chopped tomatoes
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup shredded Parmesan cheese, or more to taste
Instructions:
  • Assemble all ingredients.
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Hollow out the center of each avocado and transfer the flesh to a large bowl.
  • Combine shredded chicken, creamy cream cheese, juicy tomatoes, a sprinkle of salt, a dash of black pepper, and a kick of cayenne pepper; mix until perfectly blended.
  • Fill each avocado with a generous amount of the chicken mixture and sprinkle generously with Parmesan cheese. Place the filled avocados, cut side up, in muffin cups to keep them stable.
  • Bake in the oven until the cheese is gooey and melted, for about 8 to 10 minutes.
