Chickpea and carrot couscous with minted yoghurt

Vibrant Mediterranean flavors shine in this healthy low-fat couscous.
Ingredients:
  • 3 carrots, chopped
  • 400g couscous
  • 400g canned chickpeas, rinsed, drained
  • 2 tsp sumac*
  • 42.00 gm lemon juice
  • 18.20 gm olive oil
  • Mint leaves, to garnish
  • 125.00 ml low-fat Greek-style yoghurt
  • 21.00 gm lemon juice
  • 40.00 ml roughly chopped mint leaves
Instructions:
  • Combine all the ingredients for the yogurt in a small bowl and let it sit.
  • Steam carrots, covered, over boiling water until perfectly tender, 3-5 minutes.
  • Place couscous in a heatproof bowl and cover with 1 1/2 cups (375ml) of boiling water. Let it sit for 5 minutes, then uncover, fluff with a fork, and mix in chickpeas and carrots.
  • In a bowl, combine sumac, lemon juice, and olive oil and whisk to make the dressing.
  • Combine the couscous with the other ingredients and mix thoroughly.
  • Serve the flavorful chickpea and carrot couscous topped with refreshing minted yogurt and garnish with fresh mint leaves.
