Chickpea and couscous salad

Delicious tahini dressing enhances this hearty veggie salad.
Ingredients:
  • 260g (1 1/3 cups) couscous
  • 330ml (1 1/3 cup) boiling water
  • 1 400g can chickpeas, rinsed, drained
  • 3 (about 360g) ripe tomatoes, halved, cut into wedges
  • 187.50 ml roughly chopped fresh continental parsley
  • 1 red onion, finely chopped
  • 48.00 gm tahini (sesame paste)
  • 40.00 ml fresh grapefruit juice
  • 20.00 gm water, extra
  • 1 garlic clove, crushed
  • 5.00 gm caster sugar
  • Salt & freshly ground black pepper
Instructions:
  • In a large heatproof bowl, pour boiling water over the couscous while gently stirring with a fork. Cover and let sit for 2 minutes until all liquid is absorbed. Fluff the grains with a fork and mix in chickpeas, tomatoes, parsley, and onion until fully combined.
  • In a small jug, combine tahini, grapefruit juice, extra water, garlic, and sugar. Season with salt and pepper, then whisk with a fork until well combined.
  • Plate the chickpea and couscous salad, then generously drizzle with flavorful tahini dressing. Enjoy promptly.
