A vibrant salad bursting with refreshing mint and parsley flavors.
Ingredients:
  • 2 400g cans chickpeas (Annalisa brand), rinsed, drained
  • 375.00 ml loosely packed fresh continental parsley leaves
  • 250.00 ml loosely packed fresh mint leaves
  • 1 red onion, halved, thinly sliced
  • 1 carrot, peeled, coarsely grated
  • 36.40 gm extra virgin olive oil
  • 21.00 gm fresh lemon juice
  • 2 tsp sumac
Instructions:
  • In a large bowl, mix chickpeas, parsley, mint, onion, and grated carrot. Season with salt and pepper, then gently toss until evenly combined.
  • Whisk oil and lemon juice in a jug using a fork. Season with salt and pepper to taste.
  • Drizzle the zesty lemon dressing over the chickpea and parsley salad, gently toss to mix, and serve promptly, topped with fragrant sumac.
