Chickpea and tomato loaded hommus

Elevate your dip game with loaded hummus topped with spiced chickpeas, roasted tomatoes, and fresh herbs. Serve with toasted baguette slices for an irresistible appetizer.
Ingredients:
  • 36.40 gm olive oil
  • 400g can chickpeas, rinsed, drained
  • 2 tsp Middle Eastern Harissa spice mix
  • 250g vine-ripened cherry tomatoes
  • 200g Hommus Dip
  • 20.00 ml Greek-style yoghurt
  • 35g pkt Harissa Finishing Drizzle
Instructions:
  • Preheat the oven to 180C. Line a baking tray with parchment paper. In a small bowl, combine oil, chickpeas, and spice mix, tossing to coat. Spread the mixture on the tray. Bake for 20 mins until golden. Then add the tomatoes to the tray and continue baking for 10 more mins until the tomatoes soften.
  • Smooth the creamy hommus over a generous serving platter. Layer on the chickpeas and tomatoes. Finish with a delightful drizzle of yoghurt and spicy harissa before serving promptly.
