One-pot chickpea curry with canned chickpeas, garlic, ginger, and warm Indian spices for a flavorful vegan dish - ready in a flash!
Ingredients:
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground turmeric
  • 2 tablespoons vegetable oil
  • 2 onions, minced
  • 2 cloves garlic, minced
  • 2 teaspoons fresh ginger root, finely chopped
  • 6 whole cloves
  • 2 (2 inch) sticks cinnamon, crushed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • salt
  • 2 (15 ounce) cans garbanzo beans
  • 1 cup chopped fresh cilantro
Instructions:
  • In a large frying pan over medium heat, sauté onions in oil until tender, about 3 to 5 minutes.
  • - Combine garlic, ginger, cloves, cinnamon, cumin, coriander, salt, cayenne, and turmeric in the pot, stirring constantly over medium heat for 1 minute. - Add chickpeas and their liquid, stirring continuously until heated through. - Remove from heat and stir in cilantro, reserving 1 tablespoon for garnish just before serving.
