Vegetarian-friendly soup made with garbanzo beans, green beans, sweet potato, and tomato in a flavorful chicken broth infused with thyme, basil, and paprika.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cups peeled and chopped sweet potatoes
  • 3 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon paprika
  • 1 tomato, chopped
  • 1 (10 ounce) package frozen mixed vegetables
  • 1 (15 ounce) can garbanzo beans, drained
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Heat oil in a saucepan over moderate heat. Saute onion, garlic, and sweet potatoes for 5 minutes.
  • Add the broth, bay leaf, basil, thyme, and paprika into the pot. Season with salt and pepper to your liking. Bring to a boil, then lower the heat to medium-low, cover, and simmer for approximately 15 minutes until the vegetables are tender but not overcooked.
  • Add the vibrant combination of tomato, green beans, and chickpeas to the pot. Let it simmer gently without a lid until everything is tender, for about another 10 minutes. Serve and enjoy while hot.
