Wholesome baby food: blend chickpeas, sweet potato, and cauliflower for a nutritious meal in 20 minutes.
Ingredients:
  • 1 medium sweet potato, peeled, cubed (about 2 1/2 cups)
  • 2 1/2 cups small cauliflower florets
  • 1/2 cup canned chickpeas, drained, rinsed
Instructions:
  • Begin by setting up a steamer basket in a large saucepan with 1/2 inch of water, making sure the water doesn't touch the bottom of the basket. Add sweet potato cubes and cauliflower to the basket. Cover tightly and bring to a boil, then simmer on low heat for about 12 minutes until the sweet potato is fork-tender. Drain the vegetables, keeping the steaming water for later use, and let them cool slightly.
  • Combine sweet potato, cauliflower, and chickpeas in a blender or food processor. Blend until smooth, adjusting consistency with steaming water as needed.
  • Enjoy right away or chill in the fridge for up to 24 hours. For freezing, fill up ice cube trays with the puree and freeze until firm. Pop out the cubes and store them in a freezer bag. Thaw in the refrigerator when needed.
