Try this flavorful and healthy Mexican rice recipe for a delicious twist on traditional cuisine, made with low-fat ingredients.
Ingredients:
  • 300.00 gm white long-grain rice
  • 2 garlic cloves, crushed
  • 40.00 ml finely chopped pickled jalapeno chillies
  • 1 carrot, finely chopped
  • 1 yellow capsicum, finely chopped
  • 200g green beans, cut into 3cm lengths
  • 400g can lentils, drained, rinsed
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
Instructions:
  • Prepare rice according to package instructions. Allow it to cool slightly, then fluff the grains with a fork to separate them.
  • Heat oil in a pan over medium heat. Saute garlic, chili, onion, carrot, and capsicum for 5 minutes, stirring occasionally until vegetables are tender.
  • Add the beans and lentils to the dish and cook for 3 to 5 minutes, or until the beans are tender and the lentils are heated through. Mix in the parsley, then season with salt and pepper to taste.
  • Combine the vegetable mixture with the rice, gently stirring to mix well. Serve.
