Spicy Mexican breakfast of fried tortilla chips, eggs, onions, tomato sauce, and cheese - a breakfast delight!
Ingredients:
  • 2 cups oil for frying
  • 30 (6 inch) corn tortillas, torn into strips
  • 0.25 cup chopped onion
  • 6 eggs, lightly beaten
  • 1 (7.75 ounce) can Mexican style hot tomato sauce
  • 0.5 cup water
  • 0.5 cup shredded Monterey Jack cheese
Instructions:
  • Heat oil in a large, heavy skillet until it reaches 350 degrees F (175 degrees C). Fry tortillas and onion until crisp and golden brown, stirring regularly. Transfer to a paper towel-lined plate to drain excess oil. Reserve a thin layer of oil in the skillet.
  • Heat up the skillet over medium heat. Add back the fried tortillas and onion, then mix in the beaten eggs, and season with salt. Cook and stir until eggs are fully set.
  • Add the tomato sauce and water, then simmer on low heat for about 10 minutes until thickened. Top with cheese and cook until melted.
