Zesty tomato soup with lemon and cayenne for a refreshing kick. Perfect for a satisfying meal!
Ingredients:
  • 1kg very ripe tomatoes, halved
  • 1 small onion, chopped
  • 1275.00 gm (1.25 litres) vegetable liquid stock
  • 1 dried bay leaf
  • 6 peppercorns
  • 2 whole cloves
  • 1 strip fresh lemon rind
  • 80ml cream
  • Squeeze of fresh lemon juice
  • Pinch of cayenne pepper
  • Chopped fresh coriander, to serve
Instructions:
  • Scoop out and discard the tomato seeds using a spoon, then place the tomatoes in a large saucepan.
  • Combine onion, stock, bay leaf, peppercorns, cloves, and lemon rind with the tomatoes and bring to a boil. Simmer covered on low heat for 1 hour, then cool slightly and blend until smooth.
  • Blend in the velvety cream, then introduce the zesty lemon juice and fiery cayenne pepper. Season to perfection with a sprinkle of salt and pepper. Transfer the mixture to a spacious bowl and allow it to cool in the fridge.
  • Before serving, elegantly ladle the delightful mixture into individual serving bowls. Gracefully drizzle a touch of additional cream on top, and artfully sprinkle fresh coriander leaves to enhance the presentation.
