Chilli beef and noodles

Whip up a speedy and vibrant beef stir-fry with noodles and sweet chili jam for a delicious meal in minutes.
Ingredients:
  • 9.20 gm olive oil
  • 300g beef scotch fillet, trimmed, thinly sliced across grain
  • 1 garlic clove, crushed
  • olive oil cooking spray
  • 200g snow peas, trimmed
  • 4 green onions, cut into 4cm lengths
  • 125g packet baby corn, halved
  • 450g packet hokkien noodles
  • 52.80 gm Thai chilli jam (see note)
  • 21.00 gm salt-reduced soy sauce
  • 62.50 ml coriander leaves
  • lime wedges, to serve
Instructions:
  • Mix oil, beef, and garlic in a ceramic bowl. Heat a wok over high heat until hot, then lightly spray with oil. Cook half of the beef, stirring for 1 minute until browned. Transfer to a bowl and repeat with the remaining beef.
  • Prepare your wok by lightly coating it with oil. Toss in snow peas, onions, and corn, and stir-fry until the veggies are just tender, about 2 to 3 minutes. Meanwhile, cook the noodles as per the package instructions, then add them to the wok. Stir-fry for an additional 2 minutes until everything is heated through.
  • Add the beef and its flavorful juices back to the wok, then mix in the chili jam and soy sauce. Stir-fry for 1 to 2 minutes until everything is heated through. Sprinkle in the fragrant coriander, toss everything together, and serve with lime wedges.
