Spicy chilli con carne: a thrilling twist on beef mince.
Ingredients:
27.30 gm olive oil
2onions, peeled, finely chopped
1 tsp chilli powder
1 small red birdseye chilli, seeded, finely chopped
2.50 gm ground cumin
2.50 gm ground cinnamon
500g lean beef mince
40.00 ml tomato puree
600ml tomato passata
500ml (2 cups) red wine
400g can red kidney beans, drained, rinsed
Cookedbrown rice, to serve
Tortillas, to serve
Instructions:
In a casserole dish, warm oil over medium heat. Sauté onion until soft, about 2-3 minutes. Stir in garlic, chilli powder, chilli, cumin, and cinnamon for 1 minute. Incorporate the mince, breaking it up as it browns, for 8-10 minutes.
Combine the tomato puree, passata, and wine in a pot. Season the mixture and bring it to a boil. Reduce the heat, cover, and simmer for 40 minutes. Stir in the beans and cook uncovered for an additional 10-15 minutes.
