Cozy up with a classic and flavorful chili con carne.
Ingredients:
  • 1 onion, chopped
  • 2 garlic cloves
  • 5.00 gm ground cumin
  • 5.00 gm ground paprika
  • 2 small red chillies, seeded and chopped
  • 750g beef rump steak, trimmed, cubed
  • 510.00 gm beef stock
  • 400g can diced tomatoes
  • 44.40 gm tomato paste
  • 420g can red kidney beans, drained, rinsed
  • 1 red capsicum, seeded and diced
  • Avocado, sliced, to serve
  • Sour cream, to serve
  • Tortillas, warmed, to serve
Instructions:
  • In a hot saucepan, sizzle onion and garlic until tender, about 3-4 mins. Introduce cumin, paprika, and red chillies. Stir and cook for another minute.
  • Combine juicy rump steak, flavorful stock, diced tomatoes, and rich tomato paste in a pot. Bring to a boil, then lower the heat and simmer uncovered for 40-45 minutes until the meat is tender and succulent.
  • Add kidney beans and capsicum to the mixture. Sauté for 10 minutes, stirring occasionally, until the capsicum is tender.
  • Garnish with avocado, sour cream, and serve with warm tortillas.
