Cozy up with a classic and flavorful chili con carne.
Ingredients:
1onion, chopped
2garliccloves
5.00 gm ground cumin
5.00 gm ground paprika
2 small red chillies, seeded and chopped
750g beef rump steak, trimmed, cubed
510.00 gm beef stock
400g can diced tomatoes
44.40 gm tomato paste
420g can red kidney beans, drained, rinsed
1red capsicum, seeded and diced
Avocado, sliced, to serve
Sour cream, to serve
Tortillas, warmed, to serve
Instructions:
In a hot saucepan, sizzle onion and garlic until tender, about 3-4 mins. Introduce cumin, paprika, and red chillies. Stir and cook for another minute.
Combine juicy rump steak, flavorful stock, diced tomatoes, and rich tomato paste in a pot. Bring to a boil, then lower the heat and simmer uncovered for 40-45 minutes until the meat is tender and succulent.
Add kidney beans and capsicum to the mixture. Sauté for 10 minutes, stirring occasionally, until the capsicum is tender.
Garnish with avocado, sour cream, and serve with warm tortillas.
