Spice up with sizzling Mexican flavors.
Ingredients:
  • 1 brown onion, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 2 garlic cloves, crushed
  • 1 long red chilli, finely chopped
  • 2 tsp Mexican chilli powder
  • 1kg 3 Star Beef Mince
  • 500ml beef stock
  • 400g can diced tomatoes in tomato paste
  • 400g can kidney beans, drained, rinsed
  • 3 sprigs oregano
  • 20.00 ml balsamic vinegar
  • Steamed rice, to serve
  • 1 avocado, peeled, seeded, chopped
  • Sour cream, to serve
  • Coriander leaves, to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, warm the oil. Cook the onion and capsicum for 5 mins until softened, then add garlic, chilli, Mexican chilli powder, and cumin. Sauté for 2 mins until fragrant. Add the mince and cook for 5 mins, breaking up any lumps with a wooden spoon, until browned.
  • Combine the stock, tomato, kidney beans, oregano, and vinegar in a pot. Season to taste. Bring to a boil, then reduce heat and simmer for 1 hour until thickened. Remove and discard the oregano sprigs before serving.
  • Plate the rice evenly among the serving plates. Garnish with the flavorful chilli con carne, creamy avocado slices, a dollop of sour cream, and fresh coriander leaves.
