Elevate ground beef with a zesty kick by creating a flavorful spicy chili con carne with beans.
Ingredients:
36.40 gm olive oil
1onion, chopped
1red capsicum, deseeded, chopped
600g beef mince
6.25 gm ground cumin
11/2 tsp chilli powder
400g can chopped tomatoes
125ml beef stock
44.40 gm tomato paste
20.00 ml red wine vinegar
420g can red kidney beans, rinsed, drained
Salt & freshly ground pepper
82.50 ml fresh coriander leaves, to serve
Steamedrice, to serve
Sour cream, to serve
Instructions:
In a saucepan over medium heat, warm the oil. Sauté onion, capsicum, and garlic until soft, about 3 minutes. Turn up the heat, add the mince, and cook until browned, stirring occasionally for 3-4 minutes.
Sprinkle in the cumin and chili powder, then cook and stir for 1 minute until fragrant. Mix in the tomatoes, stock, and tomato paste. Bring to a boil over high heat, then lower the heat to medium-low, cover, and simmer for 25 minutes, stirring occasionally.
Combine the vinegar and kidney beans in the pot and simmer uncovered for 5 minutes or until warmed. Season with salt and pepper, garnish with coriander, and enjoy with steamed rice and a dollop of sour cream.
