Spicy Tex-Mex favorite to double and freeze for later.
Ingredients:
  • 200g (1 cup) dried red kidney beans
  • 18.20 gm olive oil
  • 2 (about 500g each) beef casserole steaks
  • 2 red onions, halved, coarsely chopped
  • 1 green capsicum, halved, deseeded, finely chopped
  • 2 garlic cloves, crushed
  • 10.00 gm sweet paprika
  • 10.00 gm ground cumin
  • 20.00 ml ground coriander
  • 2 tsp dried chilli flakes
  • 2 x 400g cans Italian diced roma tomatoes
  • 500ml (2 cups) cold water
  • Salt & freshly ground black pepper
  • Steamed white rice, to serve
  • Sour cream, to serve
Instructions:
  • In a medium saucepan, cover the beans with plenty of cold water. Bring to a boil over high heat and cook for 10 minutes. Remove from heat, transfer beans and cooking liquid to a heatproof bowl, and let soak for 1 hour. Drain before using.
  • 1. Preheat your oven to 150°C. 2. Heat half of the oil in a large frying pan over high heat. 3. Sear half of the beef for 2 minutes on each side until browned, ensuring the meat retains its juices and tenderness. 4. Repeat the process with the remaining beef. 5. Transfer all the beef to a 2.5L (10-cup) ovenproof dish.
  • In the same pan, heat the remaining oil over medium-high heat. Cook the onion, capsicum, and garlic for 5 minutes until the onion softens. Stir in paprika, cumin, coriander, and chili and cook for 2 minutes until fragrant. Add tomato and water and bring to a boil. Remove from heat and stir in the beans before adding the mixture to the beef.
  • Place the covered dish in a preheated oven and bake for 2 hours or until the beef and beans are tender. Let it rest for 10 minutes. Transfer the beef to a cutting board using tongs. Cover the tomato mixture with foil and keep it warm in the oven. Use 2 forks to shred the beef with the grain for a more tender result. Add the shredded beef back to the tomato mixture and mix well. Season with salt and pepper to taste. Serve with steamed rice and sour cream, if desired.
