Spicy and healthy chilli con carne.
Ingredients:
1.5kg beef chuck steak, fat trimmed, cut into 4cm pieces
7.50 gm ground cumin
125ml (1/2 cup) water
2brown onions, chopped
4garliccloves, finely chopped
1 810g canchopped tomatoes
310ml (1 1/4 cups) beef stock
3 small fresh red chillies, deseeded, chopped
Salt & ground black pepper
24.00 gm polenta
40.80 gm beef stock, extra
125.00 ml choppedfresh coriander leaves and stems
Instructions:
In a large saucepan over medium-high heat, sear 1/3 of the steak in hot oil until evenly browned, about 2-3 minutes. Transfer to a bowl and repeat with the rest of the steak.
Heat the cumin in a pan until aromatic for about 30 seconds. Add water, onions, and garlic. Bring to a boil, then simmer on low, covered, stirring occasionally, for 10 minutes until onions are soft.
Combine the steak and its juices with the tomatoes, stock, chillies, salt, and pepper. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 2 hours or until the steak is melt-in-your-mouth tender.
Mix the polenta and extra stock in a small bowl, then add to the steak mixture. Cook uncovered for 5 minutes until the sauce slightly thickens. Stir in the coriander and serve right away.
