Chilli crab dumplings

Delicious and simple to create, these parcels are a guaranteed hit!
Ingredients:
  • 2 x 170g cans crab meat, drained
  • 227g can water chestnuts, drained, finely chopped
  • 3cm piece fresh ginger, finely grated
  • 1 long red chilli, finely chopped
  • 2 tsp finely chopped fresh coriander leaves
  • 12.20 gm fish sauce
  • 21.00 gm soy sauce
  • 30 (275g packet) gow gee wrappers
Instructions:
  • In a bowl, mix together the crab, chestnuts, ginger, chili, coriander, fish sauce, and soy sauce.
  • Lay out the wrappers. Add 2 teaspoons of crab mixture to one side of each wrapper. Moisten edges with cold water. Fold over to seal, pleat edges tightly, and then place on a baking paper-lined tray.
  • Set up a steamer with baking paper over simmering water. Steam dumplings in batches for 15 minutes, or until tender and fully cooked. Serve hot.
