Brighten rich duck with tangy mandarin zest.
Ingredients:
  • 100g (1/2 cup) caster sugar
  • 60ml (1/4 cup) light soy sauce
  • 2 whole star anise
  • 1 cinnamon stick
  • 1 piece dried mandarin peel (optional)
  • 2 tsp Chinkiang or apple cider vinegar
  • 4 duck breasts, fat scored
  • Potato puree, to serve
  • 4 small mandarins, peeled, cut in halves or thirds crossways
  • Baby herbs, to sprinkle
Instructions:
  • In a saucepan over medium heat, mix the stock, sugar, soy sauce, star anise, cinnamon, and peel (if using). Allow the mixture to come to a boil, then lower the heat and simmer for 20 minutes until slightly thickened. Stir in the vinegar.
  • Season the duck generously with salt, then sear skin-side down in a large frying pan until golden. Discard excess fat. Flip and continue cooking until desired doneness. Rest covered with foil for 10 minutes before slicing.
  • Drizzle the stock mixture onto 4 serving plates, then top with potato puree, duck, mandarin, and baby herbs.
