Indulge in Filipino sweet bread soaked in rich coconut milk and topped with a hint of savory cheese.
Ingredients:
  • 4 cups grated fresh cassava
  • 3 cups coconut milk
  • 3 tablespoons melted butter
  • 3 eggs
  • 1.5 cups white sugar
  • 1 teaspoon salt
  • 1 teaspoon lemon zest
  • 0.25 cup shredded mozzarella cheese
  • 2 cups coconut milk
  • 1 (14 ounce) can sweetened condensed milk
  • 2 tablespoons all-purpose flour
  • 0.5 cup shredded mozzarella cheese
  • 2 egg yolks, beaten
Instructions:
  • Combine the grated cassava with coconut milk, melted butter, and eggs. Mix in white sugar, salt, vanilla, cheese, and lemon rind.
  • Transfer the batter to a 9x5 inch loaf pan and bake at 350 degrees F (175 C) for 30-35 minutes, or until fully cooked.
  • Instructions for Topping: Combine 2 cups coconut milk, condensed milk, flour, and grated cheese in a saucepan. Bring to a boil while stirring constantly. Once thickened, mix in slightly beaten egg yolks and cook for two minutes. Spread over cooked cassava and bake at 400°F (200°C) until golden brown, approximately ten minutes.
