Tropical mango loaf with cinnamon, raisins - perfect summer snack.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1.25 cups white sugar
  • 0.75 cup vegetable oil
  • 2.5 cups mangos, peeled, seeded and chopped
  • 1 teaspoon lemon juice
  • 0.25 cup raisins
Instructions:
  • Mix together the dry ingredients. Beat eggs with oil and combine with the flour mixture. Stir in mangoes, lemon, and raisins.
  • Grease 2 loaf pans, then pour the batter evenly between them. Bake at 350°F - 175°C (or 325°F for glass pans) for approximately 60 minutes, or until a toothpick inserted comes out clean.
