Chipolatas with sticky mustard glaze

Prosciutto-wrapped chipolatas with spiced apple sauce.
Ingredients:
  • 12 slices prosciutto
  • 24 beef chipolatas
  • 84.38 gm maple syrup
  • 46.80 gm wholegrain mustard
  • 9.20 gm extra virgin olive oil
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 2 granny smith apples, peeled, cored, roughly chopped
  • 42.00 gm lemon juice
  • 4 fresh sage leaves
  • 5.90 gm dijon mustard
Instructions:
  • Preheat your oven to 220C/200C fan-forced, then line a baking dish with baking paper.
  • Take each slice of prosciutto and cut it in half lengthwise. Next, wrap one piece of prosciutto around each chipolata before placing them in the prepared dish.
  • In a bowl, mix together maple syrup, mustard, and 2 tablespoons of water. Drizzle the mixture over the chipolatas and gently toss to coat. Bake for 30 to 35 minutes, turning the chipolatas halfway through, until they are golden brown and glazed with the syrup mixture.
  • While the main dish simmers, prepare the apple sauce. Heat oil in a saucepan, sauté onion and garlic until softened. Add apple, lemon juice, and water, then simmer until apples are soft. Blend the mixture with sage and mustard until smooth, adjusting consistency with water if needed.
  • Enjoy chipolatas with a side of delicious apple sauce.
