Spicy chipotle shrimp tacos topped with cilantro, onion, and lime on corn tortillas.
Ingredients:
  • 1 (12 ounce) package bacon, cut into small pieces
  • 0.5 onion, diced
  • 2 pounds large cooked shrimp - peeled, deveined, and cut in half
  • 3 chipotle peppers in adobo sauce, minced
  • 12 corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 pinch salt to taste
Instructions:
  • Fry the bacon in a large, deep skillet over medium-high heat until crispy. Remove excess bacon fat. Add onions to the pan with the bacon and cook for 5 minutes until translucent. Mix in the shrimp and chipotle chiles, cook for 4 minutes until heated through.
  • Place tortillas on a medium-high heat skillet for 10-15 seconds, flip and heat for another 5-10 seconds. Stuff warm tortillas with shrimp mixture, then top with cilantro, lime juice, and salt.
