Irresistible dessert that pleases all!
Ingredients:
  • 225.00 gm icing sugar mixture
  • 100.00 gm hazelnut meal (ground hazelnuts)
  • 125.00 ml plain flour
  • 32.50 gm cocoa powder
  • 20.00 ml coffee beans
  • 185g butter, chopped
  • 6 eggwhites, lightly whisked
  • Icing sugar mixture, to serve
Instructions:
  • Sift icing sugar into a bowl, then spoon into a jar, layering with hazelnut meal, flour, and cocoa.
  • Preheat your oven to 200°C/180°C fan-forced and generously grease a 12-hole friand pan with 1/2-cup capacity.
  • In a microwave-safe bowl, melt the butter on medium (50%) power for 1 to 2 minutes. Allow the butter to cool for 15 minutes.
  • Empty contents of jar into a large bowl, creating a well in the center. Mix in egg whites and butter until combined. Fill prepared pan with mixture. Place 3 to 4 coffee beans on top of each. Gently press to secure. Bake for 15 to 20 minutes until a skewer inserted into the center of a friand comes out clean. Let stand in pan for 5 minutes before transferring to a wire rack to cool. Dust with icing sugar and serve.
