Delightfully moist and airy angel food, beloved by my family.
Ingredients:
  • 2 cups egg whites
  • 0.25 teaspoon salt
  • 1.25 teaspoons cream of tartar
  • 1.25 cups white sugar
  • 1.25 cups confectioners' sugar
  • 1.25 cups cake flour
  • 1.25 teaspoons vanilla extract
Instructions:
  • Preheat the oven to 325°F (165°C).
  • Combine confectioners' sugar, cake flour, and cocoa in a medium bowl. Sift the mixture twice and then set it aside.
  • In a spotless large bowl, use an electric mixer on high speed to whip egg whites, salt, and cream of tartar until very stiff. Gently incorporate white sugar, 2 tablespoons at a time, while mixing. Gradually fold in the flour mixture until well combined. Stir in vanilla and then transfer the batter to a 10 inch tube pan.
  • Bake the cake at 325 degrees F (165 degrees C) for about 1 hour, or until it springs back when touched.
