Festive chocolate biscuits with chopped candy cane sprinkles.
Ingredients:
  • 250g butter, softened
  • 155g caster sugar
  • 1 tsp vanilla bean paste
  • 300g plain flour
  • 35g cocoa powder
  • 12 small peppermint candy canes, coarsely chopped
  • 230g icing sugar mixture
  • 30g cocoa powder
  • 60ml water
Instructions:
  • Preheat the oven to 180°C and line 2 oven trays with baking paper.
  • Beat butter, sugar, and vanilla with an electric mixer until pale and creamy. Mix in flour, cocoa powder, baking powder, and bicarbonate of soda until combined.
  • Roll tablespoonsful of the mixture into balls, placing them on the lined trays with enough space for spreading. Use your palm to gently flatten each one.
  • Place in a preheated oven for 15 minutes or until firm, swapping trays halfway through. Let cool on trays before transferring the biscuits to a wire rack set over an oven tray.
  • Prepare the chocolate icing by mixing icing sugar and cocoa in a medium bowl. Pour in water and stir until you get a slightly runny paste. Coat each biscuit with the icing and top with chopped candy canes. Let them sit for 30 minutes to firm up.
