Indulgent chocolate meringue pie: homemade chocolate pudding in crust, topped with fluffy meringue, baked golden.
Ingredients:
  • 1 (9 inch) pie shell, baked
  • 0.25 cup butter
  • 1.25 cups white sugar
  • 2 tablespoons unsweetened cocoa powder
  • 3 tablespoons all-purpose flour
  • 2 egg yolks
  • 1 cup milk
  • 0.5 teaspoon vanilla extract
  • 2 egg whites
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Gently melt butter in a cast iron skillet on medium-low heat.
  • Mix 1 cup of sugar with cocoa and flour. Whisk egg yolks with milk and stir into the sugar mixture.
  • Gently cook the sugar and egg mixture in the skillet with melted butter, stirring constantly until thick, being careful not to burn it. Add vanilla and pour it into the baked crust.
  • Whisk egg whites until soft peaks form, then gradually add in the remaining 1/4 cup sugar until a glossy meringue with stiff peaks forms. Spread the meringue over the hot filling, making sure to touch the edges of the crust.
  • Bake until the meringue turns a beautiful golden brown in the preheated oven for 10 to 15 minutes.
