Chocolate mousse cake with bitter-orange sauce

Indulge in a heavenly pairing of chocolate and orange in this irresistible dessert.
Ingredients:
  • 250g chocolate biscuits, crushed
  • 75g unsalted butter
  • 2 tsp instant coffee
  • 400g plain dark chocolate
  • 2 tsp brandy
  • 250g plain marshmallows
  • 550ml cream
  • 200g caster sugar
  • Zest of 1 orange, thinly sliced
  • 40.00 ml Grand Marnier or brandy
Instructions:
  • Place non-stick baking paper at the base of a 23cm round spring-form pan.
  • In a bowl, combine biscuits. Melt butter and let it cool slightly before pouring over the biscuits. Mix well and press into the pan to create a flat base. Chill in the refrigerator.
  • Combine the coffee with 1 tablespoon of boiling water in a bowl along with the chocolate and brandy. Melt the mixture over a saucepan of simmering water, then let it cool.
  • Combine marshmallows and 100ml of cream in a saucepan, stirring over low heat until smooth.
  • Whip the remaining cream until lightly whipped, then gently fold it together with the marshmallow and chocolate mixtures using a metal spoon until fully combined. Pour the mixture over the biscuit base and refrigerate for at least 4 hours until set.
  • To prepare the orange sauce, combine sugar and 75ml water in a saucepan over medium heat. Stir until sugar dissolves; avoid stirring thereafter. Cook until the mixture turns a light toffee color. Remove from heat, and cautiously pour in 100ml boiling water and orange zest. Simmer for 5 minutes until slightly thickened. Mix in the Grand Marnier and drizzle over pie slices to serve.
