Chocolate self-saucing pudding

Quick and versatile winter dessert for the whole family, ready in minutes.
Ingredients:
  • Melted butter, for greasing
  • 2 eggs, at room temperature
  • 110g (1/2 cup) caster sugar
  • 100g (2/3 cup) self-raising flour
  • 10g (1 tbsp) cocoa powder
  • 30.00 gm hot water
  • 9.20 gm vegetable oil
  • Icing sugar, to dust
  • 310mls (1 1/4 cups) boiling water
  • 100g (1/2 cup, firmly packed) brown sugar
  • 20g (2 tbsp) cocoa powder, sifted
Instructions:
  • Preheat oven to 180°C. Grease a 1 litre (4 cup) ovenproof dish with melted butter. For microwave cooking, use a 1.5 litre (6 cup) ovenproof dish.
  • Whisk eggs in a medium bowl with electric beaters until frothy and pale. Gradually add caster sugar and whisk for 2 more minutes until thick and pale.
  • Sift flour and cocoa powder over the egg mixture, then gently fold in with hot water and oil until just combined. Pour the mixture into a greased dish.
  • Combine boiling water, brown sugar, and cocoa powder in a bowl to create the sauce. Gently pour the sauce over the cake batter using the back of a large metal spoon for a perfect finish.
  • Bake in a preheated oven at 350°F for 45 minutes, or until a skewer inserted halfway into the pudding comes out clean. Let it rest for 10 minutes before serving. Optionally, sprinkle with icing sugar before serving.
