Indulgent chocolate pudding for any season.
Ingredients:
  • 45g (1/4 cup, lightly packed) brown sugar
  • 100g (2/3 cup) self-raising flour
  • 15.00 gm cocoa powder
  • 80ml (1/3 cup) milk
  • 40g (2 tbsp) butter, melted, cooled
  • 80g (1/2 cup, lightly packed) brown sugar, extra
  • 20.00 gm cocoa powder, extra, sifted
  • Icing sugar, to serve
  • Vanilla ice-cream or thickened cream, to serve
Instructions:
  • Preheat the oven to 170°C. Grease a 750ml (3-cup) round ovenproof dish with melted butter and place it on a baking tray lined with non-stick baking paper.
  • In a medium bowl, combine sugar, sifted flour, and cocoa, stirring until mixed.
  • Whisk the milk, egg, and butter in a bowl or jug until combined. Add to the dry ingredients and beat with a wooden spoon until a smooth batter forms. Pour into the greased dish and smooth the surface with the back of a spoon.
  • In a bowl, mix the extra sugar and extra cocoa, then spread evenly over the chocolate mixture in the dish. Slowly pour the boiling water over the sugar and cocoa mixture. (Don't worry if it looks messy, it will turn out perfectly.)
  • Bake in a preheated oven for 40 minutes until a cake-like top forms and a skewer inserted halfway into the center comes out clean. Let it sit for 5 minutes to allow the sauce beneath to thicken and cool slightly. Dust with icing sugar and enjoy with ice cream or cream.
