Peppermint candy adds crunch to rich, creamy dark chocolate tart. Delightful!
Ingredients:
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 1 bag (12 oz) dark chocolate chips (2 cups)
  • 1/3 cup whipping cream
  • 1 cup butter
  • 1/4 cup dry pudding mix from 1 box (4-serving size) vanilla pudding and pie filling mix (not instant)
  • 1/2 cup whipping cream
  • 1/2 teaspoon peppermint extract
  • 1/2 teaspoon vanilla
  • 1 bag (2 lb) powdered sugar
  • 1/2 cup coarsely chopped peppermint candy canes
Instructions:
  • Prepare a 15x10x1-inch pan by spraying it with cooking spray and set aside 1/2 cup of the semisweet chocolate chips. In a 2-quart saucepan, combine the remaining semisweet chocolate chips, dark chocolate chips, and 1/3 cup cream. Heat over medium-low heat, stirring constantly until melted. Pour the mixture into the prepared pan and spread it evenly. Refrigerate until set.
  • In a 3-quart saucepan, combine butter, pudding mix, and 1/2 cup cream. Heat over medium heat, stirring constantly until boiling. Remove from heat and add peppermint extract, vanilla, and powdered sugar. Beat until smooth. Spread over the cooled chocolate layer and freeze until firm, about 15 to 20 minutes.
  • Place 1/2 cup of chocolate chips in a small resealable freezer plastic bag. Microwave on High for 45 to 55 seconds, flipping the bag over halfway through. Massage the bag until the chips are melted and smooth. Snip a small corner off the bag, drizzle the chocolate over the top, then sprinkle with chopped candy. Cut into 15 rows by 5 rows.
