Fiery pasta to ignite your taste buds.
Ingredients:
  • 375g dried tortiglioni pasta
  • 250g chorizo
  • 1 medium brown onion, chopped
  • 2 garlic cloves, crushed
  • 1 large red capsicum, thinly sliced
  • 1/2 tsp dried chilli flakes
  • 2 x 400g cans diced tomatoes
  • 82.50 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Boil pasta in a generously salted large saucepan until perfectly tender. Drain well.
  • Heat a large, deep frying pan over high heat. Cook chorizo, onion, garlic, and capsicum, stirring occasionally for 5 minutes until chorizo is crisp. Stir in chilli and tomato, and simmer for 5 to 7 minutes until sauce thickens.
  • Combine pasta and half of the parsley in the pan. Season generously with salt and pepper, toss to evenly coat. Garnish with the remaining parsley before serving.
