Festive and delicious Christmas dessert slice for your holiday feast.
Ingredients:
  • 1 packet 85g Lemon Flavoured Jelly
  • 1 packet 85g Lime Flavoured Jelly
  • 1 packet 85g Strawberry Flavoured Jelly
  • 250g plain sweet biscuits
  • 100g butter, melted
  • 1 1/2 tsp orange rind, finely grated
  • 375g cream cheese, at room temperature
  • 115g (1/2 cup) caster sugar
  • 4.40 gm vanilla extract
  • 300ml thickened cream
  • 6.00 gm powdered gelatine
Instructions:
  • Prepare each jelly individually as per the packet instructions but with only 80ml (⅓ cup) of cold water. Divide the jellies into 3 shallow glass containers and chill in the refrigerator for several hours or overnight until set.
  • Place baking paper in a 23cm square cake pan, ensuring that excess paper overhangs the edges.
  • In a food processor, pulse biscuits into fine crumbs. Mix biscuit crumbs with melted butter and orange zest. Press the mixture into the base of a lined pan. Chill in the refrigerator for 1 hour until set.
  • Cut each container of jelly into bite-sized 2cm cubes, using only half of each jelly for the recipe.
  • In a mixer, blend cream cheese, sugar, and vanilla until velvety. Slowly incorporate the cream.
  • In a small bowl, pour 3 tablespoons of boiling water over gelatine. Stir until gelatine is fully dissolved and let it cool slightly. Beat the gelatine into the cream cheese filling until well combined. Spread half of this mixture over the biscuit base. Place jelly cubes over the cream cheese, pressing lightly. Finally, spread the remaining cream cheese mixture on top and gently tap the pan to level the mixture. Refrigerate until set for a few hours. Cut into 12 pieces and serve.
