Decadent Christmas trifle with layers of fruitcake, cream, and custard - a tempting make-ahead dessert.
Ingredients:
  • 2 x 85g packets port wine jelly crystals
  • 500.00 gm boiling water
  • 252.50 gm thickened cream
  • 500g tub premium vanilla custard
  • 1/2 x 800g dark fruit cake, cut into 2cm cubes
  • 40.00 ml brandy (optional, see note 1)
  • 400g cherries, pitted
  • Extra cherries, to serve
Instructions:
  • In a heatproof bowl, combine jelly crystals with boiling water and whisk until dissolved. Mix in 400ml of cold water, cover, and refrigerate for 2 hours until slightly thickened.
  • With an electric mixer, whip the cream until soft peaks form, then mix in the custard gently until just combined.
  • Place the cake in a 12 cup-capacity bowl. Drizzle with brandy if desired. Layer half of the jelly and half of the custard over the cake. Add cherries, then layer the remaining jelly and custard. Cover and refrigerate overnight.
  • Garnish with additional cherries before serving.
