Impress your guests with a decadent Christmas pudding.
Ingredients:
  • 30g Butter, for lightly greasing the pudding basins
  • 375g sultanas
  • 375g currants
  • 375g raisins
  • 125g mixed peel
  • Grated rind of 1 lemon
  • 2 cooking apples, grated
  • 250g Premium Cultured Unsalted Butter, grated
  • 375g soft white breadcrumbs
  • 250g sugar
  • 6 eggs
  • 1 tsp flour
  • 1 tsp ground cloves
  • 2.50 gm cinnamon
  • Good pinch of salt
  • 40.00 ml brandy, or rum if desired
Instructions:
  • Lightly grease 2 pudding basins with butter for a perfect preparation.
  • Chop raisins and mixed peel into small, uniform pieces.
  • In a large bowl, combine breadcrumbs with sifted flour, salt, and spices for added flavor and texture.
  • Combine the grated butter, apple, lemon rind, mixed fruits, and sugar.
  • Whisk eggs until light and airy, then incorporate rum or brandy if desired.
  • Combine with the remaining ingredients until thoroughly incorporated, ensuring the mixture has a soft consistency.
  • Divide the mixture among the prepared dishes and cover with parchment paper and foil or a cloth.
  • Secure tightly with string.
  • Slowly simmer for 7 hours on the first day, then continue cooking for an additional 4 hours on the day it will be served.
