Try our impressive Christmas pudding with ice-cream, orange butter, and candied orange for a festive treat!
Ingredients:
  • 800g mixed dried fruit
  • 70g almond
  • 20.00 ml orange rind, finely grated
  • 125ml orange juice
  • 125ml liqueur
  • 250g butter, softened
  • 330.00g brown sugar
  • 5.00 gm mixed spice
  • 4 free range eggs
  • 210g breadcrumbs
  • 75g plain flour
  • Vanilla ice-cream, to serve
  • Candied orange (optional, *see notes), to serve
  • 125g unsalted butter, softened
  • 60ml liqueur
  • 1 tsp orange rind, finely grated
  • 1.25 gm mixed spice
Instructions:
  • Combine mixed fruit, almonds, and orange rind in a large bowl. Simmer orange juice and liqueur in a saucepan over low heat. Pour the hot mixture over the fruit. Cover and refrigerate overnight to allow the flavors to blend and intensify.
  • In a bowl, use an electric mixer to whip together the butter, sugar, and mixed spice until light and creamy. Then, add the eggs one at a time, mixing well after each addition. Fold this mixture into the fruit blend, then gently mix in the breadcrumbs and flour.
  • Prepare the pudding basin by greasing it and lining the base with baking paper. Dust the sides with flour, then spoon in the mixture and smooth the surface. Top it off by covering with a pleated square of baking paper and foil, securing it tightly around the rim of the basin either with a lid or by tying string around twice.
  • To create a water bath, set a heatproof saucer upside down in a large saucepan. Place the pudding basin on top of the saucer in the pan. Pour enough boiling water into the pan, reaching halfway up the side of the basin. Simmer on medium heat. Cover the pan and check occasionally, adding more boiling water if needed. Cook for 6 hours or until a skewer inserted in the center comes out clean. Let it rest for 10 minutes before unmolding onto a serving plate.
  • Using an electric mixer, beat butter and sugar in a bowl until pale and creamy. Add liqueur or orange juice, orange rind, and mixed spice, then beat until well combined.
  • Optionally, garnish the pudding with a side of creamy ice cream, zesty orange butter, and candied orange for added indulgence.
