Delicious homemade protein bars loaded with oats, coconut, sunflower seeds, and a touch of dark chocolate for extra sweetness.
Ingredients:
  • 3 cups rolled oats
  • 0.5 cup sunflower seeds
  • 0.5 cup unsweetened shredded coconut
  • 0.25 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon sea salt
  • 1 cup plain Greek yogurt
  • 0.5 cup natural peanut butter, melted
  • 6 tablespoons pure maple syrup
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup vanilla protein powder
  • 1 (2 ounce) bar dark chocolate, chopped
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 13x9-inch baking dish.
  • Combine oats, sunflower seeds, coconut, brown sugar, cinnamon, and sea salt in a large mixing bowl.
  • Combine yogurt, peanut butter, maple syrup, coconut oil, and vanilla extract in a separate bowl until creamy. Pour over oats mixture and mix well. Stir in protein powder and chocolate, then spread into the prepared baking dish.
  • Bake until golden brown in a preheated oven for about 15 minutes.
