Garlic and ginger rub enhances spicy cilantro chutney over baked chicken in creamy cashew sauce. A flavor-packed delight!
Ingredients:
  • 1 (3 pound) whole chicken, cut into pieces
  • 2 teaspoons minced fresh ginger root
  • 2 teaspoons minced garlic
  • 1 bunch fresh cilantro
  • 1 teaspoon ground cumin
  • 1 jalapeno chile pepper, stem and seeds removed
  • 2 tablespoons lemon juice
  • 0.25 cup ground unsalted cashews
  • 1 cup heavy whipping cream
  • salt to taste
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Peel off and discard the chicken skin. Wash the parts and dry them gently. Mix the garlic and ginger, and massage it onto the chicken. Place the chicken parts in a 9x13 inch baking dish, cover with foil, and set it aside.
  • Blend cilantro, cumin, jalapeno, and lemon juice in a blender until smooth, adding water if needed. Set aside. In a small bowl, combine cashews and cream, then pour over the chicken.
  • Roast chicken at 350°F (175°C) for 30 minutes, until juices run clear. Continue baking uncovered for 15 minutes to thicken the gravy.
  • Take the dish out of the oven and blend the gravy with the saved cilantro chutney. Thoroughly mix and pour over the chicken before serving.
