Delicious clam chowder with clams, potatoes, and bacon. Perfect with sourdough bread or in a bread bowl.
Ingredients:
  • 0.5 pound bacon, cut into 1/2 inch pieces
  • 5 medium unpeeled potatoes, diced
  • 2 medium carrots, diced
  • 2 (6.5 ounce) cans chopped clams, drained with juice reserved
  • 2 cups water, or as needed
  • 2 (1.8 ounce) packages dry leek soup mix
  • 1 quart half-and-half
Instructions:
  • Fry bacon in a large pot over medium-high heat, stirring occasionally, until crispy and golden brown, approximately 10 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the flavorful drippings in the pot.
  • Add the potatoes and carrots to the pot, generously season with salt and pepper, and sauté in bacon drippings, stirring often, for 5 minutes.
  • In a pot, combine clam juice and enough water to cover the potatoes. Bring to a boil, then lower heat, cover, and simmer until potatoes are tender, about 10 to 15 minutes.
  • Gently stir in leek soup mix until smooth. Add clams, half-and-half, and reserved bacon. Simmer and stir until chowder thickens, about 10 minutes.
